Lot GN-01: De La Rosa Mount Totumas Cloud Forest - Mount Totumas Coffee
Mount Totumas Coffee comprises six lots grown at elevations of
1800-1900 meters, benefiting from the natural shade cover provided
by the preserve's native trees.
Harvested by hand during peak ripeness, double sorted, floated,
and rinsed with spring water, we then use a cold anaerobic process
for 15 days. After we slow dry in a greenhouse for 4 weeks,
followed by a dehydrator for the last 4 days, our award-winning
coffee owes its success to the abundant ecological resources
offered by the preserve. Sharing a border with La Amistad
International Park, a UNESCO World Heritage site and Central
America's largest highland national park.

Producer Story:
MOUNT TOTUMAS COFFEE is located in Tierras Altas, Chiriqui,
within the Mount Totumas Cloud Forest nature preserve. Our farm
consists of six lots grown at elevations between 1800 and 1900
meters, each utilizing the natural shade cover of the
preserve’s native trees that formed part of a reforestation
plan we initiated in 2010.
The secret to our award-winning coffee can be found among the
ample ecological resources that our preserve affords us: a diverse
variety of fruiting, flowering, and nitrogen-fixing trees among our
coffee groves provide a welcoming habitat for birds, monkeys, and
other wildlife, which in turn help keep our trees happy and healthy
by providing ample fertilizer and pollination during flowering.
Additionally, the surrounding forest regulates the climate and
stabilizes erosion and soil moisture. We share a direct border with
La Amistad International Park—a UNESCO World Heritage site,
and Central America’s largest highland national park—so
it is not uncommon to find tapirs and mountain lions within the
habitat bordering our groves.
This holistic, ecologically-oriented approach to farming keeps our
trees happy and healthy, and is the underlying philosophy behind
every aspect of our operation—from seed to tree, and from
bean to cup.
