Lot GN-05: Altieri Geisha Rush DFS - Altieri Specialty Coffee
Dilgo, our Geisha plot at 1780 meters, faced challenging dry season conditions. To stimulate flowering, we irrigated a critical area, leading to an excellent harvest. The cherries underwent a Dry Fermentation process after handpicking and flotation selection. They were then dried on African beds for 5 days before a 4-day fermentation in Grainpro bags. Afterward, the lot was dried for 30 days in a refrigerated chamber with forced ventilation and dehumidifiers. Finally, it was stored at a constant temperature of 18 degrees Celsius and 55% humidity.

説明 : | Dilgo was the first plot planted with Geisha, with 70% shadow and volcanic soil. This lot was harvested in small batches in Dilgo, which is a plot at 1780 meters above sea level, named after Gene Altieri’s grandson, Diego. It has rocky soil, and the plantation faces challenging conditions during the dry season. In March 2022, it was decided to irrigate the most critical area of this plot, which stimulated an excellent flowering. In this small, irrigated area, the harvest was managed independently from the rest, and it was decided to process all those cherries under the Dry Fermentation special process. The coffee was handpicked, ensuring the full ripeness of the cherries. After harvesting, it was taken to the drying area and stayed overnight in the harvest bags. In the morning, the cherries underwent a flotation process as the first selection of beans, and then they were placed on African beds inside the drying greenhouse for approximately 5 days. Afterwards, they were transferred to Grainpro bags and left in the shade for a fermentation process lasting 4 days. After this time, the drying of this lot was completed in the refrigerated drying chamber at our facilities in Alto Lino Boquete. This drying period lasted for 30 days, alternating forced ventilation with dehumidifiers at a temperature of 18 degrees Celsius.
