This coffee is 100% handpicked. Natural process of fermentation
for 4 days. Shade dried for 6 days and sun dried for 24 days.
Brujas is on the South side of the Baru Volcano, which is the most
recent mountain formation in the area, dating back only 1.5 million
years. This inactive volcano has deep soils influenced only by the
Pacific rains, but all the forest has a natural canopy shade that
keeps a cool climate all year round with a well-defined dry period
that allows for very ripe maturation of the beans with a special
terroir that develops lemon, lime, and pomelo citrus floral notes
with a juicy and sweet aftertaste.
Ethiopian Wild Heirloom varieties come from the CATIE (Research Station) collection from introductions from the FAO expeditions to Africa in 1960.
