NATURAL DRY ANAEROBIC FERMENTATION AND SLOW SUNDRIED


THIS LOT WAS HARVESTED VERY RIPE AND CHERRIES WITH A PURPLE COLOR WHCICH BRINGS A HIGH SUGAR CONTENT AT THE FRUITS, GIVING AN ANAEROBIC FERMENTATION FOR A PERIOD OF 7 DAYS IN SEALED 200 LITERS CONTAINERS, WHICH WERE HOMOGENIZED WITH THE COFFEE  CHERRIES JUICE EVERY 2 DAYS, ROLLING THE CONTAINERS FOR A PERIOD OF 10 MINUTES EACH TIME.

 

AFTER THIS WE START A SLOW DRYING  PROCESS ON THE AFRICAN BEDS WITH A 5 HOURS SUNDRIED EVERYDAY FOR 30 DAYS, SO THE DESHIDRATION PROCESS OF THE COFFEE CHERRIES BRINGS A LOT OF NATURAL SUGARS ON THE DRY CHERRIES SKIN, DURING THE WHOLE DRYING TIME THE CHERRIES WERE MOVED TWICE A DAY TO GOT A UNIFORM SUNDRIED TO ALL BEANS.

 

THE DRY CHERRIES WERE STORAGE AT THE FARM TO DEVELOP FOR 60 DAYS BEFORE PROCESSING THE GREEN BEANS, SO THEY CAN DEVELOP ALL THE SWEET AND RICH TROPICAL FRUIT FLAVORS ENHANCE BY THE FERMENTATION TECHNIQUE USED AT THIS LOT.

 

THE CUP PROFILE OF THIS LOT SHOWS A VERY CLEAN NATURAL TROPICAL FRUITS TASTE AND INTENSE SWEET FRUITS AND SPICES AROMAS, MIX IN LAYERS OF FLAVORS WITH A DEEP CREAMY CHOCOLATE BODY, MAKING THE SWEET FLORAL NOTES OF CITRUS OR ORANGE BLOSSOM COME TO YOUR PALATE.

EMPORIO ESTATE IS LOCATED IN THE SLOPES OF BARU VOLCANO IN THE PALMIRA ARRIBA ZONE, IN BOQUETE – PANAMA. THIS FARM WAS RIGINALLY PLANTED MORE THAN 90 YEARS AGO WITH THE ORIGINAL OLD TYPICA VARIETAL USED BY THE FIRST COFFEE FARMERS IN BOQUETE FROM THE LAST CENTURY, WITH ORIGINAL TREES FROM THOSE TIMES, OLD TYPICA TREES 5 TO 7 METERS HIGH AND MORE THAN 90 YEARS OLD.

 

WE ADQUIRED THIS COFFEE ESTATE 7 YEARS AGO AND DECIDED TO KEEP THE FARM PLANTATION STYLE, COMBINING COFFEE WITH DIFFERENT CITRUS AND ORANGES TREES, VERY COMMON FROM THE OLD TRADITIONAL BOQUETE COFFEE FARM FROM LAST CENTURY. THIS PARTICULAR MIX OF FRUIT TREES AND COFFEE BRINGS A VERY SPECIAL TERROIR AND TASTE TO THE CUP PROFILE FROM THE FARM. MAINLY PLANTED WITH RED  AND YELLOW CATUAI, AS WELL AS THE POPO LOT IN THE PRIMARY FOREST PART OF THE FARM WITH THE OLD TYPICA COFFEE PLANTATION. SINCE  WE FOUND THESE OLD TYPICA TREES, PRESERVING THEM HAD BEEN ONE OF OUR FOCUS IN THE IDENTITY OF THE FARM, MAKING A VERY SPECIAL  ENVIROMENT WITH THE NATURAL FOREST FROM THE EMPORIO CREEK, HOME OF A HAULER MONKIES FAMILY WHICH LIVE AND SHARE THIS NATURAL BEAUT IFUL SPOT WITH US.
