Coffee for this lot was harvested during the month of March 2021. The coffee was pulped and left to ferment for 36 hours, then it was washed and taken to raised beds for around 8 days for pre-drying, the final drying was carried out using a unique mechanical drying process until reaching 11.5% humidity.

Producer Story:
Finca Sophia, founded in 2008, is located in the highlands of Panama, near the settlement of Nueva Suiza, just up the road from Volcan. At an altitude of 1900- 2,124 meters, Finca Sophia is one of the highest coffee farms in Panama, and is planted with Geisha. Pairing this legendary coffee variety with the extreme altitude of the farm results in a one of a kind coffee. Finca Sophia was selected as a 2016 Good Food Awards winner, won 1st place in the Best of Panama coffee competition in the Washed Geisha category in 2017 & 2020 (receiving the highest price ever paid for a coffee at auction), 2nd place in the Natural Geisha category in 2020, and now in 2021 is honored to have placed 5th in the Washed Geisha category and 16th in Natural Geisha category, extending its winning streak in the highly competitive Best of Panama Competition.
