Lot GW-07: Altieri Geisha Sunrise WS - Altieri Specialty Coffee
This coffee was harvested on March 3, 2022, in the Chombi plot
at 1800 meters above sea level, located in the Mima Estate farm in
Alto Quiel, at the foothills of the Baru Volcano.
The harvesting process involved handpicking the coffee cherries,
the harvested cherries were transported to the processing
facilities in Alto Lino Boquete. There, a flotation process was
employed to separate low-density beans, followed by depulping. The
beans, along with their mucilage, were then fermented in open tanks
for 24 hours. An average nightly temperature of 15 degrees Celsius,
allowing natural fermentation to occur through the wild yeast
present in the cherries.
After fermentation, the coffee beans were washed and sun-dried in a greenhouse for a period of 6 days. Then transferred to a storage warehouse, where they were kept at a constant temperature of 18 degrees Celsius and an average relative humidity of 55%.
